Trevi is a small medieval borough dozing among the Umbrian hills where there is a
perfect harmony between man and the environment and where the olive tree reigns supreme in the landscape.
The Elisir olive estate is spread in this uncontaminated oasis. This is a family farm and that provides our
clients the certainty of buying very high quality products.
All production phases, from the cultivation of the olive trees to the collection of
olives, to the control of the milling carried out by a trustworthy mill, till the final bottling, are made
directly in the farm laboratory and checked by the owner of the farm and his family.
We have devoted ourselves to this kind of activity for a very long time in order to obtain a
genuine product enriched with an old flavour.
Our olive trees are located on hills at about 500 meters above sea level; this farmland is perfect for a
variety of oils: Moraiolo, Frantoio,
Leccino.
We collect the olives at the moment of their veraison with traditional manual methods (exactly like it used
to happen 2000 years ago); within 24 hours the olives are grounded in a mill and the result is an extra
virgin olive oil that has a very low acidity level and is rich in
antioxidants and polyphenols.
This is the typical oil of the Mediterranean diet.
This oil is cold pressed at a temperature that does not exceed 27°C in order for
the oil to be able to keep its features unaltered from the tree to your dish.
